Demand for herbs and spices continues to grow supported by greater consumer interest in healthy lifestyles and nutrition based on natural ingredients. Europe is one of the largest markets for herbs and spices in the world, with about 25% of the global market. These products often pass through a long and complex distribution chain before reaching the final consumer, and this encourages unfair practices and fraud, which are difficult to detect. It can be assumed that the more links in the distribution chain, the greater the likelihood of illegal practices in the marketing of herbs and spices and fraud. This paper aims to identify ways herbs and culinary species are adulterated in the European Union market based on Rapid Alert System for Food and Feed (RASFF) notifications and ways to prevent fraud. The analysis shows that RASFF notifications related to the "herbs and spices" category accounted for 6.4% of total notifications in 2023. Most notifications were for cumin seeds, peppercorns, paprika, oregano, and nutmeg. The largest group of frauds involved the presence of unauthorized dyes.
